Aval Upma/Vegetable poha

Aval upma/Vegetable poha is a tasty and healthy dish packed with loads of nutrients. 

Flattened rice/Aval/Poha is an easily digestible form of raw rice which is made by  de-husking and flattening the rice.

Ingredients:
  • 2 Cups Aval/Flattened rice/Poha (thick variety)
  • 1 tbsp Raw Peanuts/Pachai verkadalai/Groundnut
  • 2 tbsp Coriander leaves (Finely Chopped)
  • As per taste Salt

Veggies:
  • 2 Onions (Finely Chopped)
  • 2 Tomatoes (Finely Chopped)
  • 1/2 cup Carrot (Finely Chopped)
  • 1/2 cup Beans (Finely Chopped)
  • 1 cup Potato (Finely Chopped)
  • 1/2 cup Capsicum (Finely Chopped)
  • 1 Green Chilli (Finely Chopped)

For Seasoning:

  • 1 tsp Mustard seeds
  • 1 tsp Urad dal
  • 1 tsp Channa dal
  • 2 Red chillies
  • A pinch Asafoetida/Hing
  • A spring curry leaves
  • 1 tbsp Oil


Method:

1) Wash 2-3 times and drain water from aval/poha and keep aside. Washing the aval is enough for it to absorb the water instead if you soak it in water it will turn mushy and lose its shape.

2) Heat oil in a kadai/Pan and add peanuts. Fry for 2-3 minutes for them to become crispy. Transfer the peanuts to a plate.

3) In the same oil, add Mustard seeds to crackle. After it crackles, add other ingredients given in "For Seasoning" and fry till the dals turns light brown.

4) Add all the veggies and fry them. Close it with a lid to cook in low flame. After the veggies are half cooked, sprinkle few water and cook again.

5) After the veggies are fully cooked, add the peanuts and salt. Mix them well.

6) Then add aval/poha and mix well.

7) Finally garnish with coriander leaves and switch off the flame..

Tasty Aval upma/Vegetable Poha is ready.

Tips:

1) You can also add 1 tbsp of freshly grated coconut along with coriander leaves.

2) Some prefers 1 tsp of Lime juice to add finally for a tangy taste.

3) You can also prepare the same upma with out veggies and adding onion alone.
