Pineapple Rasam

Pineapple is a tasty fruit with high Vitamin C and Manganese content. Also Pineapple Rasam is a popular Rasam served in Marriages. 

This rasam is prepared with freshly ground Rasam powder which gives excellent flavour and tastes as Kalyana Rasam (Rasam served in marriages).

Ingredients:

  • 1 cup Pineapple (chopped as small pieces)
  • 2 Medium size ripe tomatoes (finely chopped)
  • 1 ladle Toor dal
  • 1/2 tsp Turmeric powder
  • A small piece Asafoetida/Hing
  • 1 tsp Jaggery
  • 1 tbsp Coriander leaves (finely chopped)
  • A spring Curry leaves
  • 2 tsp Ghee
  • As per taste Salt

To Grind:
  • 2 tsp Channa dal 
  • 1 tbsp Coriander seeds 
  • 1 tsp Cumin seeds 
  • 1/2 tsp Pepper corns
  • 2 no Dry red Chillies
  • 1 cup Pineapple (chopped as big pieces)
  • A spring Curry leaves

For Seasoning:

  • 2 tsp Ghee
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • A spring Curry leaves
  • 2 Red chillies


Method:

1) Pressure cook toor dal and keep aside.

2) Heat 2 tsp ghee in a kadai and add Channa dal, Cumin seeds, Pepper, coriander seeds, Red chillis and Curry leaves. Fry them till channa dal turns light brown and nice aroma arises.Transfer to a plate to cool down, then grind to a coarse mixture.

3) Add 1 cup of big Pineapple pieces, jaggery and grind to smooth paste. Keep aside to add this paste to Rasam later.

4) Add chopped tomatoes to 2 cups of water and bring it to boil. 

5) After it boils nicely and tomatoes are cooked, add Salt, Asafoetida and the ground paste. Dilute it with required amount of water and leave it to boil. 

6) Add turmeric powder and cooked toor dal to Rasam. Let it boil in medium flame till nice aroma arises.

7) Add 1 cup of small pineapple pieces, Coriander leaves and curry leaves. Switch off the flame once froth develops.

8) Heat 2 tsp ghee in a kadai and crackle mustard seeds, then add cumin seeds, curry leaves and red chillies.

9) Pour this seasoning mixture over Rasam.


Tasty Pineapple Rasam is ready.
