Millet Aloo Tikki/Varagarisi potato cutlet is a delicious as well as a nutritious evening snack for your kids. They can never realise that these yummy and crispy tikkis are actually loaded with tiny millet grains.
Being a big fan of millets, I try to incorporate millets in almost all the recipes. The highlight about Millet Aloo tikki is that no one can tell you that you have made this tikki with millets. It has got a crispy outer layer with a deliciously cooked millet stuffing sitting inside. Millets are high in nutritional value and so including them in our daily diet is laying a strong foundation for a healthy living. If you are under the impression that millets are boring and are not going to taste good then you should definitely try this recipe to realise that you are wrong.

Ingredients:
  • 1 cup Kodo millet/Varagarisi
  • 3 medium sized potatoes 
  • 2 Onions
  • 1-inch length Ginger (skin peeled)
  • 3-4 Garlic pods 
  • 1 tablespoon Kasuri methi
  • 2 tablespoons Tomato sauce
  • 2 tablespoons Broken Cashews
  • 1/2 cup Coriander leaves (finely chopped)
  • 2 teaspoons Lemon juice
  • 1 teaspoon Cumin seeds
  • As required to make paste-Maida
  • As required for outer covering-Bread Crumbs
  • As per taste-Salt
  • 1 ladle + for frying- Oil
Spice powders:
  • 2 teaspoons Red chilli powder (adjust according to spiciness)
  • 2 teaspoons Garam masala
  • 1/4 teaspoon Dry ginger powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Roasted cumin powder
  • A pinch Hing

Method:

1) Wash and cook the Kodo Millet/varagarisi with 2 cups of water for about 3-4 whistles or until cooked.

2) Boil the potatoes and peel the skin.

3) In a chopper, add onions, ginger, garlic and finely chop them.

4) Heat oil in a kadai and add cumin seeds to crackle. Then, add the finely chopped onion mixture and fry till they turn golden brown.

5) Add the spice powders, salt and mix well. Then, add cooked millet.

6) Use a pav bhaji masher to mash the millet so that it blends well with onion mixture and spices.

7) Add potatoes and mash again using a pav bhaji masher.

8) Add kasuri methi, tomato sauce and mix with a ladle.

9) Sprinkle coriander leaves and lemon juice to the mixture. 


10) Add the broken cashews and mix well. Make equal sized balls and flatten them in tikki shape.

11) Heat oil in a kadai and the meantime make a thick maida paste.

12) Dip the tikki in maida paste then in bread crumbs. Make sure to coat the tikki evenly with breadcrumbs covering all the sides.

13) Check the heat of the oil and drop the tikkis to fry them in oil.

12) When one side is cooked, flip it around to cook the other side.

13) After both the sides are done, transfer the tikki to a paper towel to remove the extra oil. Finish of frying all the tikkis.

Tips:

1) Instead of frying the tikkis, you can even toast it in a tawa.
