Stuffed Mixed Vegetable Paratha


Stuffed Mixed Vegetable paratha is a delicious paratha that has the nutrients of all the veggies.

If your little ones are not eating their veggie portion then this paratha will definitely help you. Not the kids alone, but this paratha will make every one in your family to finish off their plates. This paratha is ideal for packing in for short travels too. 

 Is your veggie stuffing left out??? then no worries. Do a magic and turn them into samosas, cutlets or Bondas. Yes, you can use the same stuffing with different outer portions to turn them into a yummy snack.

Ingredients for stuffing:
  • 1 Onion
  • 1/2 Carrot
  • 1/2 Capsicum
  • 3-4 Beans
  • 1/4 cup Green peas
  • 1 cup Cauliflower Florets
  • 1 Potato (medium size)
  • 2 Green chilies
  • 2  tbsp Coriander leaves (Finely chopped)
Spice powders:
  • 1 tsp Red chilli powder
  • 1 tsp Garam Masala
Seasoning:
  • 1 tsp Cumin seeds
  • 1 tbsp Oil
  • Around half a cup of Oil (for making paratha)
Ingredients for atta dough:
  • As required-Atta/Wheat flour
  • 1/4 tsp Salt
  • 2 tsp Oil (for atta dough)
  • As required-Water

Method:

1) Boil the potatoes and leave it to cool down. After it is cooled, peel the skin and mash it.

2) Drop the cauliflower florets in warm salt water for few minutes. 

3) Finely chop Green chili, onion, carrot, capsicum, green peas and beans. I have used my chopper to get this work done.

4) Heat oil in a kadai and add cumin seeds to crackle.

5) Add the chopped veggie mixture in kadai and saute well.

6) Drain water from cauliflower and chop them finely. I used chopper to finely chop the cauliflower florets.

7) Add the finely chopped cauliflower to kadai and mix again.

8) Now, add the mashed potato and keep mixing.

9) Add the spice powders, coriander leaves and saute well. Switch off the flame and transfer this mixture to a bowl to cool down.

10) After the mixture cools completely, make medium size balls.

11) Mix the atta flour, salt and 1 tsp of oil. Add required water and make a smooth dough.

12) Make medium size atta balls and set aside.



























13) Take one atta dough and roll it to small circle by sprinkling the flour.

14) Keep one veggie ball in the center and close the edges as shown in the picture.

15) Gently pat the atta ball so that the inside stuffing spread evenly.

16) Sprinkling few atta flour, roll the paratha.

17) Heat a roti tawa and drop this paratha on the tawa.

18) After one side is half cooked, flip it around. Maintain medium flame through out the process.

19) Once the other side is also half cooked, sprinkle oil on sides. Leave it for few seconds and flip again.

20) Leave it again to cook with oil for few seconds and remove from tawa.

Serve hot hot yummy parathas with curd and achar.

Tips:

1) As my chopper was a medium sized one, I was chopping all the veggies separately. If you have big one then you can chop all the veggies together.

2) Leave the paratha to cook for a long time without oil and once you add oil, you need to cook only for few seconds and remove it from tawa. If you keep cooking the paratha after adding oil for a longer time, then it might turn hard.

3) If you want some sour taste in veggie mixture, you can add few amchur powder

Variations:

1) You can add few kasuri methi for a different flavor.

2) If you are making this paratha for your kids, you can delete the green chili to lessen the spiciness.

3) This stuffing is a multi utility one, you can use the same veggie dough to dip it in maida paste, bred crumbs and toast it in tawa to make cutlets. Or use it to dip it in besan batter and fry to make a vegetable bonda.
