2) Heat three tsps. of oil in a kadai, add turmeric powder, coriander powder and onion and sauté for few mins.

3) Add beetroot and carrot and sauté for few mins.

4) Pour half a cup of water and close the kadai with a lid

5) Let the veggies cook for few mins. Once they are half boiled, add the potatoes and close the kadai again.

6) Make sure there is enough water to get cooked, in case you feel that the veggies need more water to get cooked you can add few more water.

7) If you add more water, potato will get over cooked and get mashed and the poriyal will stick together. This poriyal should not get mashed completely.

8) Finally add a pinch of garam masala, chilli powder, salt and mix well.

Tips:

1) This fry goes well with rice as well as chapathi.

2) Mixing curd with this veggie fry tastes delicious with chapathi as well.
