MLA Pesarattu/Upma Pesarattu is a Andhra special recipe.

Wondering about its name??? It is indeed an interesting fact behind the origin of this Andhra delicacy  MLA pesarattu, this version of Pesarattu was invented in State legislative assembly canteens and was served to MLA's as a special dish.

I have already posted the Pesarattu as well as Rava upma recipe, re posting the step by step procedure again in this post.

Ingredients for Pesarattu Batter:
  • 1 Cup Green gram
  • 1/4 Cup Raw Rice
  • 2 Green chillies
  • 1 inch length Ginger
  • 1 tsp Cumin seeds
  • A pinch Hing
  • As required Salt

Ingredients for Upma:
  • 1 Cup Rava
  • 2-2.5 Cups Water
  • 1 tsp Mustard seeds
  • 1 tsp Channa dal
  • 1 tsp Urad dal
  • A pinch Hing
  • 1/2 tsp Ginger (Finely chopped)
  • 1 Green chilli (Finely chopped)
  • A spring Curry leaves
  • 1 tbsp Oil
  • As required Salt

Method:

1) Soak the green gram and rice separately for 4-5 hours. 

2) Grind Green chillies, Cumin Seeds, Ginger  to coarse mixture. Next add rice and grind again. Finally add green gram and grind to smooth paste. Add salt, Hing to the batter and mix well.

3) Heat a kadai and dry roast the rava till nice aroma. Transfer the rava and heat oil in the same kadai.

4) Add mustard seeds to crackle then add channa dal and urad dal. Fry them till they turn light brown.

5) Add Green chillies, ginger and curry leaves and fry again.

6) Now, transfer the rava to the kadai and mix well.

7) Add water, salt and mix again. Leave the rava to cook by absorbing all the water, do continuous stirring to achieve better consistency.

8) Heat the dosa tawa and spread oil on the tawa.

9) Pour a laddle full of pesarattu batter and spread it in a circular motion. Drizzle oil on sides and leave it took.

10) Flip it around once if required and flip again to get the inner portion on top.

11) Now, stuff the upma like how we do for Masala dosa and close the pesarattu.

Tips:

1) You can even add few finely chopped onion while seasoning for upma, instead some might prefer to add onion to batter. 

2) I have made it as a plain upma without any veggies, you can add any other veggies like carrot, green peas, capsicum etc as per your choice.
